We have been farmers and pig breeders for 35 years. We produce with passion, in full respect of nature and mankind. We take care of every step of the supply chain from the birth of the animal to the final product, so to guarantee that our cured meats comply with high quality standards and nutritional values.
Our breeding farms are located amidst the green hills of Garda Lake, area which gives us a good part of the cereals used to feed our animals. We breed a stock of Large White Italian pigs that are the forefathers of all our production. Animals are fed with a mixture of cereals and milk whey, which we self-produce daily so that it does not contain any preservatives or by-products. Using milk whey is an old practice which nowadays has almost fallen into disuse because of its high cost, but it allows us to obtain naturally tastier meat for the production of traditionally local cold cuts of a very high quality that remains constant in time. Our farm follows Animal Welfare (Kiwa Certification DT040 ALI 01895) rules and pigs are Antibiotic Free (Kiwa Certification DT035 ALI 01894) which means that we do not give them any antibiotic, from the 49th day of life. This meaningful choice needs constant controls and significant investments in the housing structure, which must be healthy and not crowded. Produce less to produce better. This is our motto, because the care we give to our animals is led by the great consideration for the quality we want to give to our consumers.
Our supply chain is short, certified (by Kiwa) and 100% traceable with I.B.M Blockchain: besides managing directly pigs growth, we take care of the whole supply chain by selecting every company in charge of the remaining production phases. All our products are gluten-free and lactose-free and come exclusively form our Antibiotic Free pigs: Bucolico PDO Dry Cured Ham of San Daniele del Friuli, cured 14 to 24 months in the typical region of San Daniele del Friuli; Catullo High Quality Baked Ham; Coppa Cotta Vinessa (pork neck baked into Lugana Wine); Rosetta Roasted Bacon and Salami El Salam.
